Abstract

The rise of AI-based hyper-local delivery platforms, which include predictive ordering, route optimization, and zero-commission models, is changing food businesses in India's Tier-3 towns. This study looks at the impact of these platforms on restaurants in Tamil Nadu's smaller cities like Pollachi, Tiruchengode, and Namakkal. These traditional outlets struggle to access the market as online delivery grows in 2026. Using a mixed-methods approach, data was collected from 80 restaurant operators in five Tier-3 towns through structured Likert-scale surveys and semi-structured interviews. We assessed revenue growth, operational efficiency, and innovation through descriptive statistics, one-way ANOVA, thematic analysis. Platforms like Zaaroz help predict demand in real-time, cutting food waste by 25–30% and reaching peri-urban customers. Key findings show a 40–42% average revenue increase for businesses that adopted these platforms. This rise is driven by hyper-local logistics, with delivery times under 20 minutes, and dynamic pricing algorithms. Innovations include AI personalized - menu personalization, like Chettinad fusion combos, and eco-friendly packaging. However, 35% of operators faced issues such as data privacy concerns, biases in algorithms favoring larger companies, high on boarding costs, and unreliable internet in rural areas. The study highlights the need for inclusive AI policies, subsidized technology training, and incentives for small eateries to promote sustainable growth and support the economic revitalization of Tier-3 towns. Future research should focus on long-term scalability.
